INGREDIENTS
– 1c of MRM Green Banana Powder
– 1 scoop of MRM Salted Caramel Veggie Elite Protein
– 1c of Almond meal
– 2tsp baking powder
– 1/2c of soft brown sugar
– 1c of low fat Greek yoghurt
– 1c low fat milk (or milk of choice)
– 2/3c Coconut oil
– 1 Banana (peeled and mashed)
– 3 medium eggs (beaten)
– 1tsp sea salt
DIRECTIONS
1. Preheat the oven to 350f. Spray a muffin tray with a baking spray grease.
2. In a bowl combine all “dry” ingredients (Green Banana powder, almond
meal, salt, protein powder and baking powder)
3. In a separate bowl, beat the eggs, banana and brown sugar together for 2 minutes. Add remaining “wet” ingredients (yoghurt, milk & coconut oil) to the egg mix.
4. Gently fold the dry mix through the wet mix until just combined, being careful not to over mix as this will make it doughy when cooked.
5. Using roughly an ice cream scoop sized portion, scoop the mix into the muffin moulds and bake for 15-18 minutes, or until a toothpick comes out clean when pierced.
