SMOKED CORN & TOMATILLO SALSA VERDE
1 1/2 lbs tomatillos (husk removed)
2 ears of corn (husk removed)
1/2 white onion
3 garlic cloves
1/2 cup cilantro
1/2 lime (juiced)
2 tbsp @vitacost grape seed oil
1/2 tsp cumin
Pinch of salt and pepper
1) Set smoker to 325 degrees. Add tomatillos, jalapeños, onion, and garlic cloves to a sheet pan. Rub 1 tbsp of the grape seed oil all over the veggies and corn. Smoke low and slow 35-45 mins.
2) Remove corn and set to the side. Remove seeds from jalapeños. To a blender, add the tomatillos, jalapeños, garlic, onion, cilantro, cumin, lime juice, 1 tbsp grape seed oil, and pinch of salt and pepper.
3) Blend until smooth. Adjust seasoning as needed. Cut the corn off the cob and mix it into the salsa. Serve with chips and a cold festive beverage of choice!
