Matcha Chocolate Oat Bites
Ingredients:
- 1 cup cashews
- 1/2 cup rolled oats
- 1 tbsp MRM matcha powder
- 1/2 cup condensed coconut milk
- 1 tbsp coconut oil
- 1 tbsp pepitas (optional)
- 1/4 cup melted dark chocolate
Directions:
- In a high-speed food processor, add all ingredients. Pulse and mix until well combined.
- If your mixture crumbles a little, add more coconut milk until it holds shape.
- Transfer to a bowl and refrigerate for 30 minutes to firm up.
- Form bite size balls with about 1 tbsp of mix. Place on a cookie sheet with parchment paper and refrigerate for 1 hour until firm.
- Drizzle with dark chocolate, let the chocolate set for 5 minutes then enjoy!
